This section contains recipes for the 4 stocks which I and most food professionals consider to be essential stocks:
- White Stock
- Brown Stock
- Chicken Stock
- Fish Stock
- Vegetable Stock
I have included Vegetable stock because in contemporary cuisine our awareness of the health issues are exceedingly more emphatic than the days of classical cuisine. Remember that a recipe should not constrain you but guide you so do not be afraid to make changes.
