A fresh sauce made with the chile cascabel.

tomatillos
chiles cascabel
garlic
onion
salt
  1. wash all ingredients well
  2. remove husks from the tomatillos
  3. Toast the tomatillos, chiles, garlic and onion on a hot gridle until they are lightly charred.
  4. Grind or puree all ingredients together
  5. Adjust salt to taste.
Note: Be careful to not over grind or puree this sauce as it should be chunky and not smooth in consistey.
