A fresh sauce made with the chile cascabel. QUANT. UNIT INGREDIENT PREPARATION 8 5 3 4 - each each cloves ozs. to taste tomatillos chiles cascabel garlic onion salt wash all ingredients well remove husks from the tomatillos Toast the tomatillos, chiles, garlic and onion on a hot gridle until they are lightly charred. Grind or puree all ingredients together Adjust salt to taste. Note: Be careful to not over grind or puree this sauce as it should be chunky and not smooth in consistey. Return to the Mole Page
