LITERALY MEANS "DRUNKARDS' SAUCE" AND IS MADE FROM CHILE PASILLA, BEER AND ORANGE JUICE AND IS TYPICALLY VERY DARK TO BLACK IN COLOR DUE TO THE CHILES PASILLAS.

- Toast chiles on a griddle until slightly charred and skin is blistered.
- Cut them open and remove seeds and veins and tear or cut into strips.
- Soak them for 20 minutes in the beer.

- Juice the orange.
- Now grind or puree the chiles with the beer, oranje juice, salt and garlic.
- Cut them open and remove seeds and veins and tear or cut into strips.

- Chop the olives coarsely and finely dice the onions.
- Crumble the mild white cheese.
- Add the onion, cheese and olives to step 2 and mix well.
- When serving garnish the sauce with some of the crumbled white cheese and chopped olives.
