LITERALY MEANS "DRUNKARDS' SAUCE" AND IS MADE FROM CHILE PASILLA, BEER AND ORANGE JUICE AND IS TYPICALLY VERY DARK TO BLACK IN COLOR DUE TO THE CHILES PASILLAS.

chiles pasilla
beer
  1. Toast chiles on a griddle until slightly charred and skin is blistered.
  2. Cut them open and remove seeds and veins and tear or cut into strips.
  3. Soak them for 20 minutes in the beer.

  1. Juice the orange.
  2. Now grind or puree the chiles with the beer, oranje juice, salt and garlic.
  3. Cut them open and remove seeds and veins and tear or cut into strips.

mild white cheese
  1. Chop the olives coarsely and finely dice the onions.
  2. Crumble the mild white cheese.
  3. Add the onion, cheese and olives to step 2 and mix well.
  4. When serving garnish the sauce with some of the crumbled white cheese and chopped olives.
