   GETTING READY: WHAT WE ARE TALKING ABOUT


Pickling, and canning, or preserving, are just a few of the ways that mankind has discovered and refined in the attempt to save it's hard won food supplies from spoiling. First came the discovery of drying to preserve, then cooking and smoking. On the road to the methods of today, sugar,in any form be it granulated, syrup or honey, was revealed to be a powerful preservative. Then came the discovery of the magic of salt and brines to lay away food stocks for harder and leaner times, and foods that were "brine-fermented processed" became known as pickled products.

This web resource document concerns only one tiny sliver of the many ways foods are preserved or guarded for future consumption. The process of pickling and canning are what we deal with here and it is something so elementary that all chefs should have had their hand at it
